3 HEALTHY SALAD RECIPES TO GET FIT AFTER THE HOLIDAYS

There are those for whom summer rhymes with bikini body guide and healthy routine and then there are those for whom summer rhymes with ice cream, rosé and barbecues (I let you guess which camp I belong to). There I no longer have a choice, if I want to be able to clear my conscience before winter, I will have to eliminate this little brioche which has taken up residence without being invited. So today I wanted to share with you these 3 healthy salad recipes that will help me get back in shape without starving me.



Quinoa Tabbouleh


The idea in this recipe is to eliminate the semolina which is a carbohydrate (therefore very caloric) to replace it with quinoa, an equally nutritious vegetable protein. To quinoa I add diced tomatoes, cucumber, raisins, fresh mint, small pieces of chicken breast and voila! Be careful not to add too much oil either, the goal of this tabbouleh is to stay low in fat.

Thai salad my way


Probably one of the healthiest cuisines in the world, Thai cooking has a lot to teach us. Not being a big pro of this culture I still wanted to inspire me for this too too good salad recipe. Layer in a bowl: rice vermicelli, carrot and zucchini sticks cut into julienne strips, bean sprouts and prawns. Then season with mint leaves, cilantro, a few peanuts/fried onions (I did say a few), lime juice and soy sauce.

Grilled vegetable and feta salads



Like many of my ideas, I found this one on Pinterest. Simply grill in a pan with a little olive oil: cubed zucchini, corn and chickpeas. Once everything is nicely browned, you can remove from the heat and leave to cool. The mixture must remain crunchy, the goal is not to cook the ingredients. Refrigerate then add pieces of feta when serving. Simply delicious!
